The Sauvignon Blanc grape originated from France’s Bordeaux and Loire valley regions. These vines are heat tolerant and grow quickly, requiring consistent pruning for best results. In Ontario, Fume Blanc must consist of 100% Sauvignon Blanc.

On the nose, notes of ripe fleshy mango, prickly pear and lychee dominate. The palate has lovely and inviting energy with smooth juicy fruit characteristics and notes of grapefruit, apricot blossom and finishes with notes of supple vanilla florals and baking spice. With 10 months aging in French oak, this wine has a lengthy finish with a refreshing and vibrant chalky acidity.
