By introducing Icewine early in the winemaking process, we unlock layers of fruit complexity and flavour while maintaining a crisp, dry profile. A blend of the traditional sparkling varietals —Pinot Noir, Chardonnay, and Pinot Meunier—with Vidal Icewine. The sparkling fruit is picked early providing freshness and acidity, while Icewine adds concentration and balance.
