Our 2020 Blanc de Noirs is made solely from the Pinot Noir grape. This sparkling wine is a wonderful example of Niagara’s exceptional cool climate Pinot Noir producing region. Making a white wine from a red grape requires great care. Juice from gentle, whole berry pressing was fermented in stainless steel. On lees for over four years, yeast contact in the bottle harmonized all of the elements together in this delicate, Brüt style wine. The result is a beautiful, copper coloured wine with a very fine mousse and delicate effervescence.

On the nose, there is a beautiful balance between a rich biscuity characteristic and notes of bright red cherry. On the palate, a stunning effervescence complements hints of fresh strawberry, ripe red apple, and a touch of toasted almond. This sparkling wine is both complex and fresh while remaining remarkably smooth on the finish.
